What it is: Bal Mithai is the universally recognized symbol of Kumaoni sweet craft. It is composed of evaporated milk solid (khoya) cooked patiently over low heat until the sugars gently caramelize into a dark brown, chewy fudge, which is then cut into rectangular blocks and coated in tiny white sugar balls (dana).
